Vegetable juices are even healthier than fruit juices, and should be included in the diet to optimise health and well being. Green juices, made from a variety of green vegetables, have a rejuvenating effect on the body because they are rich in chlorophyll (the life blood of the plant) which helps to purify the blood, build red blood cells, detoxify the body and provide fast energy. Green juice is the perfect fuel for your body. Its high water content means it is easily assimilated and it contains the whole vegetable except for the fibre, which is the indigestible part of the plant. Green juice therefore provides all the healthful ingredients in a form that is easy to absorb and digest.
........Fresh and Organic
Choose organic fruits and vegetables. These contain the highest and best complement of minerals since the organic matter in the soil breaks down inorganic minerals (which your body can't use) and turns them into an organic form. Fresh vegetables are the best because they are highly complex and carry a high quality of structural information and order to feed your body. They are also rich in anti-cancer and anti-ageing compounds.

Vegetable juices, especially the very dark green ones, can be an acquired taste. If you are new to vegetable juices and feel a bit apprehensive about drinking them, start off with this one:
Juice enough carrots to fill half a 250-ml glass. Then juice enough apples to fill the other half of the glass. (It's 50 per cent carrots and 50 per cent apples). Drink it for the first two weeks of your juice journey. After that, start to reduce the percentage of apple juice and either increase the carrot or, preferably, add some juiced celery and juiced cucumbers. Before long, you'll find you're becoming a real vegetable juice junkie.
